1/2 c flour
pinch of salt
4 Tbsp corn flour
1 level tsp baking powder
1/2 c sugar
Separate the whites and yolks of eggs.
Sift together flour, corn flour, baking powder, and salt.
Beat egg whites until stiff and peaky, gradually add sugar, whisk until thick and smooth, then whisk in egg yolks.
Quickly and lightly, fold in dry ingredients with a metal spoon and divide mixture evenly between 2 well greased sandwich tins. Bake at 200 degrees C for 15 minutes.
Cool and spread jam and cream between the sponge cakes.
