Chocolatetown Special Cake

Ingredients
1/2 C Hersey's Cocoa
1/2 C boiling water
2/3 C shortening
1-3/4 C sugar
2 eggs
1 tsp vanilla
2-1/4 C unsifted all-purpose flour
1-1/2 tsp baking soda
1/2 tsp salt
1-1/3 C buttermilk or sour milk*

Frosting
Makes 2 CUP FROSTING (This is the amount I make in the dark flavor)

1/3 C margarine

choose 1 of the following:
3 tbsp cocoa (light flavor)
1/3 C cocoa (med. flavor)
2/3 C cocoa (for dark flavor)

2-2/3 C confectioners sugar
1/3 C milk
1 tsp vanilla

Directions
*To sour milk: Use 4 tsp vinegar plus milk to equal 1-1/3 cups.

Stir together cocoa & boiling water in sm. bowl until smooth.
Set aside.

Cream shortening, sugar & vanilla in lg. mixer bowl until light & fluffy.
Add eggs; beat well.
Combine flour, baking soda and salt;
add alternately with buttermilk/sour milk to creamed mixture.
Blend in cocoa mixture.
Pour into three greased & floured 8 or two 9 layer pans.
Bake at 350F for 25 to 30 minutes for 8 pans or
35 to 40 minutes for 9 pans, or until cake tester comes out clean.
Cool ten minutes; remove from pans.
Cool completely; frost as desired.

Use Chocolate Fudge Frosting

For Frosting:
Melt butter in a small saucepan over medium heat.
Add amount of cocoa for flavor you prefer.
Cook over medium heat, stirring constantly, until mixture just begins to boil.
Remove from heat.
Pour into small mixer bowl; cool completely.
Add confectioners' sugar alternately with milk, beating to spreading consistency.
Blend in vanilla.
Frost cake; top sides and between layers.
Hershey's cocoa or regular bakers' cocoa may be used.
If made properly this is a very moist cake.....so do not over bake.
