Molded Potato SaladRecipe Index: Side Dishes > Potatoes1 envelope unflavored gelatin 1/4 cup cold water 1 cup boiling water 1/4 cup lemon juice 3 tablespoon sugar 1 teaspoon salt 4 cups diced cooked potatoes 3 hard boiled eggs, chopped 8 stuffed green olives, sliced 1/4 cup diced green pepper 1/4 cup diced red pepper 1/4 cup chopped onions 1/4 cup chopped fresh parsley 1/2 cup heavy cream, whipped 1 cup diced celery 1 cup mayonaise or salad dressing 1-1/2 teaspoon salt Directions Soften gelatin in cold water. Dissolve in boiling water. Stir in lemon juice, sugar and salt. Chill slightly. Add all other ingredients to first mixture. Chill in pan or large mold until firm. This will keep nicely for several days. It should be made the day before you would like to serve it. Serves 8-10 people |
