4 pounds boiling potatoes
1/2 cup (1 stick) butter or bacon fat or a mixture of both
2 garlic cloves, finely chopped
2 medium onions, chopped
1 medium green pepper, chopped
1 medium red pepper, chopped
3/4 teaspoon paprika
Salt and freshly ground black pepper
1. Scrub the potatoes well and cut them into thin slices. Melt the buter and/or bacon fat in a large skillet over low heat and add the potatoes, garlic, onions, and peppers. Toss to coat all surfaces with fat.
2. Cover the pan and saute, tossing, occasionally, for about 30 minutes or until the potatoes are tender and nicely browned. Season to taste with paprika, salt, and pepper. Serve hot.
Serves 10 to 12.
