Mashed Potatoes With SkinsRecipe Index: Side Dishes > Potatoes10 large potatoes 1/4 cup (1/2 stick) butter, softened 1 large red onion, coarsely chopped 1/2 cup sour cream 1 large egg, lightly beaten Salt and freshly ground black pepper Directions 1. Scrub the potatoes well and then place them in a large pot with salted water to cover. Boil until tender, 20 to 25 minutes. 2. While the potatoes are cooking, melt the butter in a small skillet over low heat. Add the onion and saute until transparent and tender, about 15 minutes. Combine the egg and sour cream together in a small mixing bowl. 3. When the potatoes are done, remove from the heat, drain; then transfer to the pot. Mash with a potato masher, leaving the potatoes slightly lumpy. Then fold in the sauteed onions and sour cream egg mixture. Season with salt and plenty of pepper and serve. Serves 8 to 10. |
