Wonderful Mexican Casserole

Recipe Index:  Main Courses > Mexican

Ingredients
1 pound of hamburger( or you can substitue 4 chicken breasts, boiled deboned and chopped into little pieces)
1 can cream of mushroom soup
1 can cream of chicken soup
1 can rotel tomatoes
1/2 cup evaporated milk (or little more if needed)
1 large onion chopped
1 can of pinto beans or ranch style beans, drained
you can add some bell pepper too if you want
1 large bag of Doritos
long horn chedder cheese, (I like LOTS)

Directions
you cook the hamburger and drain. In large mixing bowl add hamburger and soups, rotel, evaporated milk, onion, beans and what ever else you want. Then mix well. Then in a cassarole dish you layer the meat and soup mixture, then crushed up chips, and then cheese, until you have used it all. ending with cheese on top.
You bake at 325 or 350 depending how hot your oven gets. Mine tends to run a little hotter than others. For 45 minutes or until all is hot and cheese is melted.

Notes
ps: it is very important that you start your layers with the meat and soup, because if you start with chips it will burn on the bottom.
