Strawberries in Ginger Cream

Ingredients
2 cups sliced strawberries
3/4 cup sour cream
3 Tablespoons light brown sugar
1 1/2 Tablespoons crystallized ginger, finely chopped

Directions
Place strawberries in medium bowl, whisk together
sour cream, brown sugar and crystallized ginger.
Just before serving, stir sour cream mixture into
strawberries and spoon into 4 small dessert
dishes. Garnish with mint leaves, if desired.
